Detox salad with cucumber and parsley

I had a few cucumbers. And I remembered my grandmother’s delicious cucumber salad, that she used to make as a side next to the Sundays family lunches. Not knowing what her recipe was, I thought I attempt to recreate the flavours.

Cucumbers are very hydrating thus great for the skin. Parsley has excellent detoxing properties. If you are pregnant make sure to eat parsley in moderation.

Detox salad with cucumber and parsley

Ingredients for the detox salad:

6 organic cucumbers
1 bunch of parsley
1 clove of garlic

Dressing: 1/2 grapefruit
1 tbsp raspberry vinegar
1-2 tbsp honey
Salt, pepper

Method:
Wash and thinly slice the cucumbers. Chop the parsley and garlic into small pieces. Mix the dressing ingredients and combine with the salad.

My grandma used to do the dressing with regular vinegar and sugar, so this is my healthy version.

Ingredients
  • 6 organic cucumbers
