These cookies are also great for Christmas. I prefer them raw as they are nice and lemony 🙂
When making these cookies, I cut out the shapes, but when I started to bake them, they’ve all melted together. So if you would like to have these raw, then cut into shapes (they are deliciously lemony), otherwise cut into shapes after baking.
Ingredients
- 2 cups organic rolled oats
- 1 cup ground hazelnuts
- 1/3 cup sesame seeds (freshly ground, almost pasty)
- ¾ cup organic coconut oil
- ½ – ¾ cup coconut palm sugar
- ½ tsp allspice
- Juice of half a lemon
- Zest of 1 lemon
Method
- Melt the coconut oil and sugar on low temperature, then mix all ingredients.
- If you are baking, bake it in a preheated oven at 140-160 Celsius for about 12-15 minutes.
