This is a hearty soup for cooler winter nights.

A simple hearty soup.
Recipe type: Dinner
Serves: 4-5
  • 1 big onion
  • 3 cups kidney beans
  • 3 carrots
  • 3 celery stalk
  • Half cabbage
  • 2 tsp red paprika
  • 1 tsp ground pepper
  • Salt
  • Optional: 1 or 2 cubes organic vegetable stock
  • 2-3 liters water
  1. Soak the beans for couple of hours or overnight.
  2. Rinse and add more water, start cooking.
  3. In the meantime peal carrots and cut them into chunky pieces together with the celery.
  4. Add one whole onion, carrots and celery.
  5. Cut cabbage into small strips and approximately 15 minutes later, add it into the soup.
  6. Add red paprika and pepper, salt to taste.
  7. Cook until beans are tender. Serve it with some yoghurt on to if you like.
