Zucchini-Carrot salad

I love everything Italian; the country, the landscapes, the language and the food of course 🙂

This is a delicious salad that I’ve seen on the Food Network, but as always I’ve modified it a bit. So here it goes:

Ingredients for 2:

2 zucchini (courgettes)

2 large carrots

125 g asparagus

fresh basil leaves

salt, pepper, olive oil

Cut the veggies to thin slices. Heat up some olive oil in a pan and separately cook the zucchini for couple of minutes, ground some pepper on top as well, then take them out and continue with the carrot, and the asparagus in the same manner, all separately. Layer them in a bowl and sprinkle some fresh basil in between each. It smells so great! You can serve it cold or hot as  well. Buon apetito!
