I have a very naughty recipe to share with you. I know this blog supposed to be all about healthy nutrition, but sometimes you can allow yourself to take a little break and indulge in some sweetness 🙂 Here it goes – my cherry and chocolate parfait recipe:
For the base:
200 g ladyfingers
50 g dark chocolate (minimum 70% cocoa content)
50 g unsalted butter
Crush the ladyfingers. Melt the butter and the dark chocolate together in a pot. Let it cool a bit, then mix it with the ladyfingers and press it in a freezerproof container. Put it in the freezer.
The parfait:
350 g (11 1/2 oz) jar morello cherries in syrup
pinch of ground cinnamon
1/2 teaspoon vanilla extract
1 tablespoon caster sugar (can be brown or ‘healthier’ sweetener like stevia)
1 egg yolk
150 g (5 oz) half-fat crème fraiche
50-100 g dark chocolate
Drain the cherries and put 100 ml (3 1/2 fl oz) of the syrup into a small saucepan. Stir the cinnamon, vanilla extract, sugar and dark chocolate into the syrup and heat for 5 minutes until the sugar and chocolate dissolved. Set aside to cool.
Stir the egg yolk through the crème fraiche. Add the drained cherries to the syrup, then mix in the crème fraiche.
Take the parfait base out of the freezer and transfer the cherry-chocolate mixture on the top of it. Freeze it for at least 4 hours. Eat it within 2 days. Decorate it with fresh cherries before serving. Very yummy! 🙂
