I’ve adapted this great energy boosting truffles recipe from Kreg Weiss (of vegacommunity.com). These are also perfect if you have a sweet tooth, but want to snack on something healthy.
Blend the following mixture in a food processor until it’s fine:
2 cups of dates
½ cup of oatmeal
1 cup of raw walnuts
heaping tablespoon raw cacao powder
You can also add a tablespoon of flex seeds to it – I didn’t have it at home, but will try with it as well.
Once it’s ready, add small amounts of liquid to it (for example vanilla rooibos tea), to create a stiff paste. You can do this in the food processor or in a bowl, mixing it with a spoon (as I did). The mixture shouldn’t be too wet, but remain stiff and easy to roll in the hands.
Cool the mix in the refrigerator for about 30 minutes, then remove it. Roll small balls from it, then toss and coat the balls in unsweetened coconut. Store in refrigerator.
Try to use fresh, organic ingredients. It tastes yummy and an excellent energy booster before or after exercise. The energy balls are nutritious, but have it in moderation though as they are full of calories as well! Enjoy!
