Now that my baby is more than 7 months young, I introduced this delicious porridge for breakfast. It tastes so good that I am going to make it for myself as well. J The base recipe is from Annabel Karmel’s Superfoods for Babies and Children.
150ml formula milk
2 tbsp rolled oats
4 pieces dried apricot (untreated, the brown one)
1 ripe peach or pear
Put the milk, oats and chopped dried apricots into a small saucepan and simmer for about 3-5 minutes. Blend it with the peach or pear to make it smooth.
Dried apricots are a good source of iron (babies iron store runs out by the end of 6 months), potassium, fibre and beta-carotene. Oats give long-lasting energy and help stabilize blood sugar. They are also rich in a form of soluble fibre that protects intestinal surfaces and helps to keep cholesterol levels down.
