As I am experimenting with more raw, I discover foods that are new to me. I had the first taste of chia seeds in the last couple of weeks. So far I have sprinkled it on my morning cereal and I really like the crunchy taste of these tiny seeds. However now it’s time to try out more ways of having it in my diet.
Because I have sweet tooth, the first thing I made is a basic chia pudding. This includes also making nut milk, which was my first time 🙂
For the nut milk I used:
1 cup cashew nuts
4 cups of filtered water
(makes around 750ml milk)
Soak the cashews for 2-5 hours in water. Rinse and add them to the blender. Add water and blend. And the nut milk is ready! Couldn’t be more simple 🙂 You can make it from other nuts too. Almond is very good.
To make pudding out of it you will need:
5-7 seedless dates (if this is not enough sweet for you, add some agave sirup or even better coconut palm sugar to it)
1/4 cup chia seeds
Add the dates to the milk and blend it in. Put the chia seeds in a bowl, add the milk and combine. Put it in the fridge for 3-4 hours or overnight. The seeds will expand, but you’ll still taste the crunchiness. Serve it in glasses and decorate with raspberry or any fruits you like.
Perfect for a nutritious breakfast or as a dessert even in the evening.
