This is one of my favourite Christmas treats, great to have it in the morning with some hot chocolate. My grandmother used to prepare it during the holidays, so it brings back nice memories.
Ingredients
- 350g spelt flour or gluten free flour
- 80g butter or coconut oil
- 60g coconut palm sugar
- A pinch of salt
- 20g fresh yeast or powder / or you may try with Bicarbonate soda
- 50g raisins
- 4 egg yolks
- 250ml almond or rice milk
Method
- Mix all ingredients well, starting with the eggs and sugar, until the mixture is smooth.
- Put it in a baking shape and let it rise.
- Preheat the oven at 180 Celsius and bake until ready.
