Walnut and Fig Bread

- 1 tsp instant dry yeast
- 500 g organic wholegrain spelt flour
- 1 tsp salt
- 1 tsp demerara sugar
- 1 tbsp ground flax seed
- 300 ml luke warm water
- 1 tbsp olive oil
- 100 g dried figs chopped into small pieces
- 50 g walnuts
- 4 tbsp orange juice
- In a large bowl mix together the flour, salt, sugar and yeast.
- Stir in 300 ml luke warm water.
- While the mix is still lumpy add the oil then knead well to make smooth and pliable dough.
- Leave he dough in a bowl covered with a cloth, in a draught free place to double in size.
- Meanwhile chop the figs and walnuts and leave them to soak in the orange juice
- Turn out the dough in a floured surface, add the soaked figs and walnuts then knead firmly for several minutes.
- Shape the dough and put it into an oiled 1kg bread tin or place it on an oiled baking sheet.
- Cover and leave dough to rise for about 40 minutes in a warm place.
- Bake in a preheated oven for 40-45 minutes.
